Sparkling water on tap, in your own kitchen. A plumbed-in carbonation system connects to your mains water and a CO2 cylinder and gives you chilled still water and soda water on demand — no bottles to lug home, no cartridges to replace, no crate of empties by the back door.
How sparkling water dispensing works
The principle is the same one behind every kegerator we sell. Cold water holds dissolved CO2 far better than warm water, so the unit chills incoming mains water first, then carbonates it under pressure before it reaches the tap. Because you control the regulator, you control the fizz — anywhere from a soft spritz through to something genuinely sharp. That is the main advantage over a sealed consumer machine, where the carbonation level is decided for you.
Choosing a setup
Under-bench systems are the tidiest option for a permanent kitchen install. The carbonator and chiller hide inside the cabinet and only the tap is visible. Choose a dedicated dual-outlet water tap alongside your existing mixer, or replace the mixer entirely with a four-way tap that runs hot, cold, chilled and sparkling from one fixture.
Keg-based kits suit anyone who wants soda water without plumbing work — a renter, a shed bar, or a setup that shares a fridge with beer taps. You carbonate in a ball lock keg and dispense the same way you would a beer.
Sizing your CO2
A 2.6kg cylinder carbonates roughly 200 litres of soda water; a 6kg does around 500 litres. For a household drinking a few litres a day, the 6kg means far fewer swap-outs and a lower cost per litre. Cafés, offices and busy family kitchens should go straight to the larger bottle.
Filter it first
Carbonation concentrates chlorine flavour rather than masking it, so unfiltered sparkling water often tastes worse than the same water flat. A WaterMark certified twin under-sink housing running a sediment cartridge and a coconut carbon block fixes that for well under a hundred dollars, and it keeps grit out of your carbonator at the same time. Don't reach for reverse osmosis here — RO strips the minerals out completely, which is what you want for building a brewing water profile and exactly what you don't want in a drinking glass.
What to expect from installation
In Australia, anything plumbed into mains drinking water must be installed by a licensed plumber, and any filter housing in that line has to be WaterMark certified to AS/NZS 3497. Allow around 100mm of clearance at the front of an under-bench unit for ventilation and hose bend radius, and check your cabinet depth before ordering.
