What is the difference between a pot still and a reflux still?
A pot still does one distillation and keeps the flavour of the wash. A reflux still re-distils inside a column to give clean neutral spirit up to about 93%, which you then flavour with an essence.

Why copper?
Copper reacts with sulphur compounds in the vapour and removes them, so the spirit is cleaner and smoother. That is why commercial pot stills are copper.

Can I make rum in a pot still?
Yes. Ferment a molasses or sugar and molasses wash and run it through the alembic. The Rum Distillery Kit has everything for the first batch, and our how to make rum guide walks through it.

Can I make whisky?
Yes. Mash malted grain, ferment it, then pot distil. The Grainfather kits do the mash and the distilling in one unit, and oak adds the barrel character.

Can I make gin or essential oils?
Yes. Fit a botanical basket to vapour-infuse gin, or distil plant material for essential oils.

Water cooled or air cooled?
The Create+ Alembic needs a running tap during the run. The VORTEX Alembic uses fans instead, so it only needs a power point.
