Oak Chips & Spirals

Oak chips, chunks, spirals and staves give a home-distilled spirit the colour and depth that comes from a barrel, at a fraction of the price and in weeks rather than years. Everything here works in a demijohn, a carboy or the bottle itself.

Which format to use

Chips and chunks have the most surface area per gram, so they work fastest. The 500g bags of barrel chunks are generous; a small handful per litre is a sensible starting point and you can always add more. Two to four weeks is typical.

Spirals sit in a carboy or bottle and extract more slowly and evenly, which makes them harder to overdo. Good if you would rather not taste-test every few days.

Staves are the slowest and closest to real barrel ageing. Best for a spirit you are happy to leave alone for months.

Char and toast level

Char level decides the character, so match it to what you are making. Heavier char brings colour and smoke, which suits bourbon and whisky styles. Lighter toast leans to vanilla and caramel, which suits rum and brandy. French oak gives spice and tannin; American oak gives sweeter vanilla and coconut notes.

The cask-finished chunks carry residual character from their previous fill, so the port, sherry and Tasmanian whisky styles add a layer an unused chip cannot.

Where oak fits in the process

Oak goes on after distilling and after any essence, never before. Add it to spirit already diluted to drinking strength, taste every few days, and pull the oak out when it is where you want it. Over-oaked spirit cannot be un-oaked.
