To maximize acidity, we suggest starting with a low IBU (0-5) and gradually increasing the temperature during fermentation to encourage the development of sourness. For a more slow-developing and balanced beer with funk and sourness, a higher IBU (~5-10) and extended time at a slightly lower temperature (20ºC/68ºF) is recommended.
