But after decades of research, growers have learned to identify when the grapes are ready to be harvested based on the tannic ripeness, rather than sugar content alone. Australian Cabernet Sauvignon first garnered international attention with wine produced from the terra rossa soils of the Coonawarra region, displaying extraordinary fruit flavors with faint but unmistakable notes of mint.
