Flavour Families

Scotch styles range from light and honeyed to smoky and peated, with the peated options worth trying in a small batch first. Irish comes out smoother, rye drier and spicier, and blended styles sit in the middle and suit a first attempt. For American styles see bourbon essences, or add barrel character with oak chips and spirals.
