To achieve optimal fermentation results, allow this strain to freely rise and fully attenuate, producing delicate, time-honored aromas. For high gravity Saisons, it is recommended to finish the beer with an alternate yeast, such as WLP001 California Ale Yeast®, after 50 to 60% of fermentation.
