How to use
- Mash the grain and maize at 65°C for 60 minutes, mash out at 75°C, then sparge.
- Boil for 30 minutes, then add the glucoamylase to convert the remaining starch.
- Chill the wort into your fermenter and pitch the whiskey yeast. Ferment at 20–35°C.
- When the gravity is stable for two days, let the wash settle (or use Turbo Clear) and syphon it into your pot still.
- Distil, then age on the charred oak spiral or in a barrel, tasting until it's right.
Full recipe: bourbon from maize (23L, 9.4% ABV, 51% corn)
- Fill the Grainfather with 24L of water and set it to 65°C.
- When the water reaches 65°C, slowly add the grain and corn, stirring to avoid dry clumps. Set up the mash as per the Grainfather instructions and add the alpha amylase (optional: use it for the highest yield, omit it for the highest quality). Mash for 60 minutes.
- Ramp up to 75°C for the mash out and recirculate for 10 minutes.
- Sparge with 9.7L of water at 75°C.
- Bring to 100°C and boil for 30 minutes, patting down the proteins at the start to avoid foaming over.
- Once the wort is below 65°C, add the glucoamylase and hold at 50–60°C for 60 minutes. Alternatively, cool the wort to 30–32°C and add the enzyme to the fermenter with the yeast.
- Stir, then cool the wort with the counterflow chiller as per the Grainfather instructions, pitching the yeast as it collects in the fermenter.
- Ferment at 20–35°C air temperature.
- When the airlock stops bubbling and the gravity is stable for two days in a row, let the wash stand 1–2 days to settle, or use Turbo Clear to speed this up.
- Syphon the wash into your still, leaving the sediment behind, and distil following your still's instructions.
- Age the white spirit on oak: a 6–8L medium toast barrel (new or ex-whiskey), or the American Charred Oak spiral for a faster infusion.
FAQ
Can I use corn meal or cracked corn instead of flaked maize?
Yes. The recipe allows maize, corn meal or cracked corn.
Which still should I use?
An alembic pot still on the Grainfather, or the Create+ 25L boiler. A T500 can be used for a lighter result if the saddles are removed.
What is the whiskey yeast like?
A specialist dried whiskey distiller's yeast that gives an elegant, well-rounded spirit for oak ageing. 20g treats up to 25L, with 15% ABV alcohol tolerance, high attenuation (90–100%), medium flocculation and a 20–35°C range. GMO free, 24 month shelf life, made in the UK. Ingredients: dried yeast (yeast, emulsifier E491).
Should I use the alpha amylase?
It's optional. Use it for the highest yield, or leave it out for the highest quality.
