Saaz hops, known as a "noble" variety, takes its name from the Czech city of Žatec. This iconic hop is a staple in Bohemian brewing, particularly in the production of Czech pilsners. In 2019, Saaz hops made up over ²⁄₃ of the total hop production in the Czech Republic.
