A limited release from Pure Distilling: 500 g of oak chunks cut from genuine ex-Barbados rum casks. Barbados rum is aged in a hotter, more humid climate than Scotch or bourbon, which drives the spirit deeper into the wood and pulls out a softer, more tropical character — think toffee, banana and dried fruit rather than the sharp char of a bourbon barrel.
Chunks work more slowly and evenly than chips because there is less surface area per gram, which suits a longer ageing run where you want the wood to integrate rather than dominate. Start tasting at a month and pull them when the balance is where you want it.
