M08 Premium Cider Yeast from the Mangrove Jack's Craft Series. Selected for apple and pear musts, it ferments cleanly and leaves the fruit character intact rather than fermenting it out to a thin, cidery dryness.
Good attenuation with low sulphur production, so the cider is drinkable young and needs less conditioning time than a wine yeast pushed into service on a cider.
