A dry Irish stout: roast barley and chocolate malt over an ale and pilsner base, bittered firmly with Warrior. This is the one to brew if you want a pint that pours dark and finishes dry rather than sweet.
Thirty-eight IBU sounds high for a 1.047 beer, and it is meant to. In a dry stout the bitterness and the roast barley work together — pull the IBU back and the roast reads as ashy instead of clean.

What you get
- 16.5 L of pre-boiled, sealed wort in a cube
- No yeast — an English or Irish ale strain such as S-04 suits it
There is no mash and no boil. Tip the wort into a sanitised fermenter, pitch your yeast and hold a steady temperature until fermentation finishes. Add 3 L of water to land at 1.047. Yeast is not supplied, so add a sachet to your order. It is worth serving this one on nitrogen if you have the tap for it.
