Gas, electric or rotating: which pizza oven?

Gas pizza ovens are the backyard option. The HIZO G14 Gas Pizza Oven heats to 500°C and cooks a pizza in as little as one to two minutes. It has built-in gas ignition, an adjustable heat control dial and retractable legs, and needs no assembly before first use. Ooni's Koda 2 gas ovens come in 14, 18 and 24 inch cooking areas; the 24 inch Koda 2 Max fits a 20 inch New York-style pizza, or several smaller ones at once.

Rotating gas ovens take the trickiest skill out of the job. A common first-timer problem is a pizza that scorches on the side nearest the flame because it was not turned in time. The HIZO Spiro G16R is a 16 inch gas oven with a stone that rotates automatically, so the base cooks evenly without you reaching in to turn it. Ooni also makes rotating stones that fit the Koda 2, Koda 2 Pro and Koda 2 Max.

Electric pizza ovens sit on a benchtop and work indoors, with no gas bottle to refill. The HIZO NEO E13 Electric Pizza Oven reaches up to 450°C. The HIZO E12 is a compact single-deck countertop unit on a 220-240V 10A supply, made for Neapolitan-style pizza in a small kitchen. The two Effeuno ovens bake on a Biscotto stone base, and the Ooni Volt 2 and Volt 12 round out the electric options.

Multi-fuel ovens such as the Ooni Karu 2, Karu 16 and Karu 2 Pro burn wood or charcoal, or gas with the matching burner (sold separately). Choose one of these if you want real wood smoke in the crust.

Pizza oven accessories you actually need

A peel is the one accessory nobody can skip. Our perforated peels come in 12 inch (30cm x 80cm overall) and 14 inch (35cm x 80cm) sizes, and the holes shake off loose flour before it reaches the stone and burns. Once you are comfortable launching, the 8 inch perforated spinner peel lets you turn a pizza inside the oven.

After that, it depends on your oven:

• Stones. Replacement stones are listed for the HIZO G14 (14 inch), NEO E13 (13 inch), E12 (12 inch) and Spiro G16R (16 inch round). The Spiro also takes a premium round Biscotto stone made from Italian clay.
• Covers and carry bags. Waterproof covers for the Ooni Koda, Karu and Volt models, a storage cover for the NEO E13, a weather-resistant cover for the Spiro, and a standard or heavy-duty waterproof carry bag for the G14.
• Handling gear. Heat-resistant gloves, a stainless steel dough scraper, a pizza cutter, and the Spiro launching pad and heat booster shield.

Is a gas or electric pizza oven better?

It depends where you cook. Gas suits a yard or balcony, and the HIZO G14 heats to 500°C. Electric ovens work indoors with no gas bottle, and the HIZO NEO E13 still reaches 450°C.

Why buy a rotating pizza oven?

The stone turns for you, so the side facing the burner does not scorch while you wait to turn the pizza. It is the easiest way to get an evenly cooked base in a very hot oven.

Can I run an electric pizza oven off a normal power point?

What size pizza peel do I need?

Match the peel to your stone. The 12 inch peel suits 12 and 13 inch ovens; the 14 inch peel suits the G14 and larger ovens.
