This blend of two Saccharomyces cerevisiae isolates, five Brettanomyces isolates, and beneficial bacteria such as Lactobacillus brevis, Lactobacillus delbreuckii, and Pediococcus damnosus, will create a delightful medley of flavors and aromas. To maximize acidity, we suggest starting with a low IBU (0-5) and gradually increasing the temperature during fermentation to encourage the development of sourness. For a more slow-developing and balanced beer with funk and sourness, a higher IBU (~5-10) and extended time at a slightly lower temperature (20ΒΊC/68ΒΊF) is recommended. With White Labs Liquid Yeast WLP4633 Melange, the possibilities are endless!
