3 Easy Ways to Age Your Spirits with Pure Distilling Barrel Chunks - Distillery King Australia

Barrel ageing is one of the most rewarding parts of home distilling. It transforms a clean spirit into something rich, complex, and genuinely satisfying to drink. Pure Distilling Barrel Chunks make this process simple, effective, and affordable for home distillers.

Cut from genuine, freshly emptied barrels sourced from distilleries worldwide, these chunks release deep oak character, vanilla, caramel, and toasty notes straight into your spirit. The result is a flavour profile that rivals commercial aged spirits β€” at a fraction of the price.

Whether you enjoy your spirits neat, on the rocks, or in cocktails, Barrel Chunks offer a far more authentic experience than flavouring essences alone. Here are three effective methods to get the best results.

1. The Classic Method (Best for Beginners)

This straightforward approach delivers consistent, excellent results with minimal effort.

What you’ll need:

  • 2.5 litres of filtered spirit (40% ABV is ideal, but adjust to preference)
  • 500g Pure Distilling Barrel Chunks
  • 4-litre wide-mouth glass jar

Method:

  1. Pour 2.5L of your filtered spirit into the jar.
  2. Add the 500g of Barrel Chunks.
  3. Seal and let the spirit soak for the time recommended on the label. Bourbon chunks usually infuse faster than rum or whisky chunks.
  4. Taste regularly using a syringe or shot glass.
  5. Once you’re happy with the flavour, pour off the spirit and filter it through a paper or coffee filter to remove any fine particles.

Important Tip: Never use traditional demijohns (carboys) with a narrow neck. The chunks expand as they absorb liquid and can become stuck. A wide-mouth 4-litre glass jar is perfect.

2. The 93/50/60 Method (For Top-Shelf Results)

This advanced technique is our favourite for producing exceptionally smooth, refined, and complex spirits.

Higher alcohol strength (60% ABV) extracts deeper wood compounds and flavours more efficiently. When combined with double-distilled spirit, the results are outstanding.

Step 1: Double Distil Your Spirit

  1. Complete your first distillation run as normal.
  2. Filter the product through the Smart Filter at around 50% ABV.
  3. Pour the filtered spirit back into the boiler, top up with water to the MAX line, and run a second distillation.
  4. No need to filter again before ageing.

Step 2: Ageing

  1. Dilute your double-distilled spirit to 60% ABV.
  2. Add 2.5L of the 60% spirit to a 4-litre wide-mouth jar and add 500g Barrel Chunks.
  3. Monitor closely β€” the higher strength extracts flavour much faster. Taste frequently and usually remove the chunks a few days earlier than the standard recommendation. For example, Whisky Chunks often peak beautifully at 6–7 days.
  4. Once ready, pour off and filter the spirit.
  5. Dilute to your preferred drinking strength and enjoy.

Pro Tip: Bottle some at full cask strength (60% ABV) for a premium experience. You can even double-distil multiple times before ageing for an ultra-refined result that impresses friends and family.

Caution: Over-ageing at high strength can extract excessive tannins, leading to a woody, bitter, or astringent finish.

3. The Re-Soaking Method (Maximum Value)

Don’t throw those chunks away after the first use! Pure Distilling Barrel Chunks can be re-soaked for excellent second and third batches.

  • Second soak: Usually takes 2–3 times longer than the first.
  • Third soak: Takes several weeks. Add a small dash of Pure Distilling Essence if you want to boost the flavour.

After the third soak, the spent chunks are fantastic on the barbecue or in a smoker β€” especially the Bourbon Chunks for smoking meats.

Final Thoughts

Ageing with Barrel Chunks is part science, part art. Start with the Classic Method to get a feel for the process, then experiment with the 93/50/60 technique once you’re comfortable. Re-soaking stretches your investment even further.
