Crafted from a traditional Saison strain hailing from the Wallonia region of Belgium, this yeast is renowned for its production of earthy, peppery, and spicy flavors and aromas. Attenuation usually averages around 70 to 75%, leaving behind a hint of malt flavor. To achieve optimal fermentation results, allow this strain to freely rise and fully attenuate, producing delicate, time-honored aromas. For high gravity Saisons, it is recommended to finish the beer with an alternate yeast, such as WLP001 California Ale Yeast®, after 50 to 60% of fermentation.
