How do I distil essential oils?

Previously there has been a mention on the boxes and front of the instruction manuals of the Air Still stating that this unit should be used for distilling/extracting essential oils. This unit is not best used for distilling essential oils, this is best done using the Alembic Pot Still setup. However, it is possible to be done with the Air Still. This differs depending on the material you use. But a good guide is as follows:Β 

Rosemary -Β Use 300 g of rosemary leaves and 3.65 L of water (don't fill over the max amount). Turn the Air Still on, collect the distillate (preferable in fractions). We recommend collecting no more than 80% (3 L) otherwise it will boil dry and cook the rosemary.

You will collect 3 L of hydrosol (water/flavour) and a small amount of oil on top - the essential oils. Use a pipette to collect the essential oil. If you're going to make alcohol from this afterwards, boil 2-3 lots of water through it first otherwise your alcohol will smell like rosemary.


How do I distil water?

Before use, clean the inside of the still and fill it with clean water to the 4L line which is marked on the inside. Make sure that no water is spilt on the outside of the body and ensure that both electrical sockets are clean and dry.

  1. Fit the top cover of the still in place and plug the fan lead into the socket in the still body.
  2. Place a 4L collection jug under the outlet nozzle.
  3. Press the reset button on the base of the still.
  4. Connect the main power cord between the still and the mains power socket.
  5. Turn on the mains power socket switch.
  6. You will hear the fan in the top cover of the still start.
  7. It will take about 1Β½ hours for the water to heat up.
  8. Once distillation starts, water will begin to drip into the collection bottle.
  9. The still will take about 10 hours to distil off the 4 litres (1 US gallon) .
  10. The power supply reset switches off automatically when the distillation is completed.
  11. You will need to press the reset button on the base of the still before you next use it. After distillation the water needs to be polished. We recommend filtering the distilled water through a Still Spirits Air Still Carbon Filter.

Using the Infusion Basket

The Still Spirits Air Still has a hole under the lid where the vapour enters and condensers in the cooling coil before coming out as liquid alcohol. If botanicals get stuck within the cooling coil, this may cause unwanted pressure build up inside the unit.

To prevent this, when using the Air Still Infusion Basket, we suggest to:

  • Use a muslin cloth, hop bag or tea bag if using small plant materials such as driedΒ herbs and spices.
  • Use plant materials that are larger than the hole under the lid (greater than 1cm).
  • Do not turn the top of the Air Still upside down when inserting the basket to ensure no plant material falls into the hole.

Q&A

How much electricity does this still use? Does the energy usage change over the process and do you have any inforation on the total electricity used for once complete process?
Hi Kristy, the resistance of the heating element varies with the temperature change during heating. The power of the Air Still is 320W. The heating element resistance can be calculated based on the voltage value 120V, the result is 45 ohms, but considering the power consumption by the fan, the resistance value can be a bit higher than 45 ohms. AU - 230-240v, 50Hz, 340W The heating element resistance is around 115 ohms. Hope that helps :)
Can the product you produce with an air still be dangerous?
Hi Cathy, this is a great question. When using the Air Still with our Air Still Fermentation kits, it is not dangerous, you will always produce safe to drink alcohol. If you decide to ferment something else like fruits using bakers yeast, then yes it can be dangerous as you could unknowingly be producing methanol which is dangerous and deadly to drink. Therefore it is important to stick to proper distilling yeasts and always follow the instructions. Hope that helps, please let me know if you have anymore questions 😊
Do you still run the spirit through the carbon filter if you are using the botanical basket to make gin? Would the filter remove the flavour?
Hi Josh, the best way to do it is, first make the pure spirit the normal way, run it through the filter. Then do a second infusion run with the gin botanicals, and once that is distilled that is your final product, you are correct that you should not run the infused spirit through the carbon filter as that will remove some of the flavours.

Is the 10lt fermenter listed here the one with the carbon filter and tap? Or is that one only available in the companion pack? Does this kit contain everything that is in the air still plus companion pack?
